my prayers are answered.

October 11, 2009

i am not an extremely religious person but i have been known to pray my little heart out, especially when there is something as drastic as the fact that i had nowhere to live come november 1st.

i posted an ad on craigslist stating my situation, a little weary that some creepers might email me offering me a place to live.  i did get an email from someone who said he had a room with a private bathroom for rent, had a fenced yard and allowed dogs.  it was in a great part of town so i figured i had nothing to lose and i went to check it out.

well, as luck would have it, this turned out to be an ideal situation! the guy looked familiar right off the bat, he said he facebooked me before i came over and that we have a bunch of mutual friends (that is what a name like janetha will do in a database like facebook). sweet! the house was amazing and we got along really well.  i ended up agreeing to move in! i am so relieved that i know what my plans are and i have somewhere to go. here is a list of pros for the new house:

  • huge fenced yard for the dogs
  • my own spot in the garage
  • $500 covers rent, utilities & internet
  • washer & dryer right across from my room
  • my own bathroom! this hasn’t happened since i lived alone 6 years ago
  • amazing kitchen with tons of natural light, awesome appliances, etc
  • roomie works at whole foods!
  • right by the freeway entrance
  • less than 2 miles from my gym!
  • right by target, whole foods, old navy, ross, B&N.. this could be bad ;)
  • close to the mouth of the canyon (for snowboarding easy access)
  • roomies who love to cook
  • a long haired daschund lives there too :) cutie
  • they are dog lovers! my kind of people

so, my prayers were answered. i am terribly sad that i will not be living with any of my good friends, i will miss that a lot.. i love living with the girls i am with now.  but since i cannot live with them anymore, and cannot afford to live alone, i honestly couldn’t ask for a better situation to fall in my lap.  i am really glad that weight is off my shoulders and i can focus on moving. p.s.: I HATE MOVING! the next few weeks i will be packing and cleaning things out, getting rid of some stuff i don’t need (but i am a PACK RAT so it is hard to throw stuff away! i swear i still have clothes from high school).  but, to sum it all up: yay :)

ok! onto today. today was a very good day full of lots of yummy eats, baking and a stellar workout.

i didn’t eat right away today. i waited until i was hungry, which was not for about 2 hours after i woke up.

meal 1: greek yogurt+cereal+deb’s maple vanilla PB @ 11:00 AM

10-11-09 001

every time i eat deb’s maple vanilla peanut butter i am amazed. it is SO delicious. thanks again lady!

i tackled my heap of laundry all afternoon, began packing away my summer clothes and really didn’t get a lot done considering the time i spent.  i am famous for getting distracted reading old papers and magazines and whatnot when trying to clean. woops!

i decided to hit the gym around 2:00, still full from my yogurt mess, oddly enough. must have been that healthy fat that was keeping me full!

meal 2: meatloaf+flatout+LCL @ 3:30 PM

10-11-09 002

this was so good yesterday that i had to repeat. i used the last of my meatloaf, oh and lara.. you had asked about the recipe, it can be found here!

10-11-09 004

simple but so good. and protein packed!

after properly filling my belly it was time for a baking extravaganza!

first i made veggie girl’s peanut butter banana bread

10-11-09 005

10-11-09 006

10-11-09 007

10-11-09 012

10-11-09 013

yowza! this stuff was delicious! so moist and peanut-butter-banana-y! make it. now. i doubled the recipe and ended up with 2 loaves and 6 mini round loaves from my silicone muffin tin (which i LOVE, by the way).

10-11-09 015

i couldn’t resist trying half of a mini loaf :)

 10-11-09 018

10-11-09 016

next up was averie’s vegan chocolate chip chocolate cookies (i added coconut on top)

 10-11-09 010 10-11-09 011 10-11-09 019 10-11-09 020

um, incredible! and i wouldn’t expect any less, averie is the dessert MASTER!

10-11-09 029

i couldn’t find vegan dark chocolate chips so i used semi sweet, these were super chocolatey and rich.. they would be awesome alongside a glass of your favorite milk (mine is almond milk).

thanks to my two lovely vegan bloggie friends for these stellar recipes. i went up to marshall’s casa after my baking shenanigans and tested the goods out on my vegan boys. they were impressed by both treats! and marshall loved them too :)

marshall and i passed on the sunday night movie and caught up on the office instead. after one episode we took a break for dinner. i kept it simple tonight.

meal 3: annie’s mac+ground beef & steamed veggies @ 9:00 PM

10-11-09 036

i just cooked the ground beef with one yellow onion:

10-11-09 031

whipped up the annie’s mac and stirred in a few LCL wedges for extra creaminess:

10-11-09 032

and combined the two:

10-11-09 033

served alongside some steamed mixed veggies.. super simple sunday dinner was served!

10-11-09 035

of course, i mixed this all together before eating and it was actually incredible. it def could have used some hot sauce though.

it is funny because i was twittering (tweeting? i don’t know) with jenn about lazy sundays and i had asked her what she was making for dinner.. she was making a lazy batch of annie’s mac too! you just can’t go wrong :)

we are going to finish up the office and maybe squeeze in the last episode of true blood season 2. i haven’t watched TV in a long time! i kind of like doing it this way and letting the episodes pile up because when you watch shows online you don’t have to wait for the next episode or watch commercials.

you may have noticed i have been a bit absent on reading/commenting this weekend. it has been action packed and i haven’t had a moment to just relax.. so sorry for the slackage on my part. i will catch up tomorrow.

monday manana! i don’t think i am ready for it but i think it is coming whether i like it or not ;)

oh! check out averie’s giveaway and jessie’s giveaway. go, quick! p.s. erika i still need your info so i can send you your xagave!

hope you all had a fantastic weekend and that your monday is all you hoped for. and more.

Qs

1. are you a pack rat or are you good at throwing things out/giving them away if you don’t use them? i cannot part with anything to save my life. my SIL has a rule where if she hasn’t used/worn it in a year it goes.. but i have that mentality that says.. “well WHAT IF i absolutely NEED this cardigan from 11th grade one day? i better keep it just in case!”

2. what is your favorite baked good (or unbaked, if you are a raw foodie)? i like fruit cobblers/crisps the best. specifically peach. but i am not picky and i am likely to devour anything that comes my way.. as long as there are no raisins in there!

My grandma is a bit of a pack rat and my mom fights the urge. So, I make a concious effort to throw stuff out! I love no-bake cookies! The kink with oats, cocoa, and PB! Oh my they are aweome!

  2. October 11, 2009 10:38 pm

Hooray for finding a place to live!!!

I am the biggest pack rat in the world. I have clothes from BEFORE high school. “I’ll wear that some day, for real!!!” I need someone to throw away/donate my stuff when I’m not looking or something.

I love carrot cake and any kind of bars!!

    Your baked goods looks AMAZING!!!

  3. October 11, 2009 10:44 pm

    1. I tend to be a pack rat for a while but make sure to give things away at least once a year.

    2. I love fruit crisps/cobblers too!

  6. October 11, 2009 11:26 pm

Yay! Congrats on finding the place! Sounds great! Yummy baking too!

  7. October 11, 2009 11:46 pm

YAY I’m glad you founds somewhere to live and it’s somewhere you’ll enjoy. Change is hard. But sometimes change is good :-)

    1. Definitely a pack rat. It’s awful!!! I get stressed with how much stuff I have
    2. Mmm I do love fresh baked bread. And pies!

  8. October 11, 2009 11:50 pm

    1. Congrats on the place!!!!!!!! Small world the guy knew you from FB. The name Averie is beginning to be a little like Janetha but b/c I’ve only had it 6 mos and not a whole lifetime, it’s fun. I didnt have to go thru jr. high with it LOL. And being close to WF, target, your own bathroom, the laundry sit., the rent, your own bathrm….stellar freakin score!

    2. VG’s PB Nanna bread. I am so on that. Thanks VG!! And thanks Janetha for making it look sooo good!

    3. My choco chip raw vegan cookies…you made those look soooo goooood too! I love the melty chips you used (I used TJ’s semi sweet…true dark choc is too bitter for me in cookies so those work and are dairy free). The coconut…muah! Nice touch!

    4. Thanks for linking back my contest. And for linking Jessie’s. Just in the nick of time on that one!

    5. Not a pack rat. Girl, me and hubs have lived in 10 places in 10 yrs. We are now homeowners and are here to stay. But I go on every 3-4 mo Goodwill/Salv Army purges and donate just about everything that isnt nailed down. Very freeing to get rid of that which you dont use and only keep things you do. If you havent reached for it in a year, donate. And try to donate things you havent used in 2 mos. That’s my motto. It works and keeps life clutter free and emotionally freed up too!

    xoxooxoox
    love you sweetie!!
    congrats on your house!!!!!!

  9. October 12, 2009 12:03 am

Maybe I need to pray more! Haha…$500 for all of that is such a steal! Sounds like a perfect living situation. Your own bathroom?! Weeee!

Actually, I had my best roommate situation EVER because of a girl I found on Craigslist. I was worried about creepers, too, but it ended up being a deal like yours with someone who was super laid back and sweet. I still miss that house even now!

That is my kind of dinner :) Comfort food, healthfied :)

Congrats on the new living situation – it sounds great and like things worked out in the best possible way!! That’s exciting

  17. October 12, 2009 6:36 am

First of all, if you ever need a place to live in Michigan, you can stay at mine for free–as long as you bake yummy goodies like those pictured above. I’m not kidding :)

As for the pack rat-iness, I used to save everything. Now I only save the “really” important things and have minimal crap. When I moved, I de-crapped all my stuff and it’s heaven. Minimal heaven, but heaven.

  18. October 12, 2009 6:37 am

Congrats on the new place!! That sounds like a stellar living situation :) Those vegan treats look sooooo good. I may have to try out that banana bread.

    1. I used to be a total pack rat, until I started moving from one small apartment to the next once a year. Now I throw everything out – and I STILL have tons of crap!!

    2. This is a tough question. I do love banana/zucchini bread. But if I had to choose just one, I think I’d go with ooey-gooey peanut butter chocolate chip cookies. Yumm

I got the HUGE urge to bake yesterday…and I didn’t but I wish I had super cool people who trusted what I baked and who I could bake for. Ugh how about I’ll bake for your people haha. Deej & Van don’t count for me.

YAYYYY you have somewhere FREAKING AWESOME to live! For sewious that sounds like a dream come true :)

I’m an in the middle of throwing things out and keeping them. Usually about a year after I decide to keep something I say “wtf jules throw that shit out”

I hate moving too – I’ve actually only moved 3 times in my whole life so I know it could be worse but yeah – not a fan.

    1) Total and complete pack rat. You have stuff from high school? I still have stuff from middle school…

    2) I think I’ve said this before but fav baked good is chocolate zucchini cake!

  25. October 12, 2009 8:43 am

Wow – your prayers were seriously answered! What could be more perfect than that situation? And works at Whole Foods? I think you died and went to heaven lady.

Those desserts look uh-mazing. I can’t pick just one on my own, although I am partial to a good chocolate chip cookie.

I am not a pack rat. Between Goodwill, consignment shops and yard sales, I try to purge a few times a year. It’s good for the soul.

  26. October 12, 2009 8:43 am

I am glad that you got things figured out with your moving situation. It’s always stressful when things that important are up in the air.

  27. October 12, 2009 8:53 am

SO happy you found a place to live!!! That must have been really stressful!

    1) I am kind of a pack rat out of sheer laziness. I never take the time to go through all my crap and purge some things.

    1. I am a total packrat! The husband is always getting on me to go though my old shit and get rid of what I don’t need, so I’ve been making many trips to the Goodwill lately to donate the stuff I don’t need anymore.

I am not at all a pack rat. I’m always giving things away as I find that we don’t need them. Morgan on the other hand, huge pack rat. We sort of balance eachother out in that way.

My favorite baked good is zucchini bread. I have to bring it somewhere when I make it or I will eat it all!

  32. October 12, 2009 10:12 am

  33. October 12, 2009 10:22 am

yay for finding an awesome place, and so quickly too! I knew you had the good karma coming to you :)

    1. I don’t keep anything. call me unsentimental. clutter and superfluousness give me mad anxiety.

    2. straight up fresh bread is the best. in fact, not much in life is better! I had a mini baking extravaganza myself yesterday: biscuits for the hub, and (vegan, so I could have some too!) chocolate cupcakes. I think I posted my cupcake recipe before; don’t mean to brag but it’s pretty boss. coconut oil is the key!

    have a great monday!

    1. I’m somewhat of a pack rat. I never know whether I’ll need something again, you know? And I’ve learned that certain items of clothing come back in style or can be reworked, so why throw em out?

    2. This is an impossible question, but I will try. Chocolate chip cookies, brownies, banana bread studded with walnuts and chocolate chips. Three faves, all the way!

Love ya, chiquita! Oh, and I saw the tweeting last night–creepy?

Wonderful news darlin on the living situation! I can’t wait to hear more about it but it really sounds like everything is working out for ya.

I just have to comment on this…I always add a lil LC to my Annie’s Mac too! Just a little wedge adds a TON of extra creaminess! :)

    Okay question time chia.

    1. I am a NEAT FREAK!!!! Thus, I throw away everything. I have no problem parting with sentaimental junk….hope that doesn’t make me a unemotional.
    2. I’m with you girl. I am all about the crisps and cobbles and would take these over cake or cookies anyday. Anything baked with fruit is always a win for me. :)

I’m so glad you found a place! Last year when I tried to renew my lease it took me like a month to get in touch with my landlady because she would not answer my calls — finally I had to have my parents call her! It was so incredibly stressful!

Congratulations on finding a new home, WITH your own bathroom and right beside a washer and dryer. I cannot believe what a great deal it is for $500 a month!!! Yay!!! This is awesome! I’m sure it’s exciting getting to move to a new home. Congrats Janetha!!

Wow your room mate is going to fall in love with you if you bake that peanut butter bread for him. It looks fantastic!!! (p.s. Can you be my trainer??)

J! the new pad sounds awesome — though there best be space for me to crash ’cause you know this chick is visiting!

p.s. can’t believe I don’t know this but where exactly do you live? and I mean that in the least creeipest way possible.

    :) love you!

I’m SO glad your living situation got worked out! I know that can be so stressful…and I was seriously praying for you too :)

haha heck yesss for annie’s mac! I like yours better, all I added to mine was spinach..booo

    1. haha i’m such a pack rat, it takes me YEARS to finally convince myself I’m never going to use something again. but it’s weird, bc once I clear stuff out, I feel so much better.

    2. I love baking (and eating) muffins!

I used to be a big pack rat but I’m way better now. Moving a lot helps that, because you always get rid of stuff when you pack up. I’m glad you found such a great place to live! I hope it works out.

And as far as baked goods, I’m not all that picky. Does cake count as a baked good? If so, that’s my favorite but if not, I like apple crisp and peanut butter or chocolate chip cookies…pretty much if there is sugar and butter I am there :-P

So glad to hear you got your living situation striaghtened out. I know how stressful that can be- been there! I just put an offer on a house, which got accepted over the weekend! I’m soooo excited, but HATE moving. I have tons of stuff (clothes) and I can never throw anything out either. Dreading all of the packing. But can’t wait to live in my new digs!

YAY for a new pad :D Can’t WAIT to see the pics- what’s the guy like? How many people live there? DEETS!

    1. are you a pack rat or are you good at throwing things out/giving them away if you don’t use them? Pack rat by nature, but I have moved about 12 times in the past 5 years and had to downsize each time so now have VERY little stuff left :(

    2. what is your favorite baked good (or unbaked, if you are a raw foodie)? I want that banana bread! Lol. I like cornbread a LOT- maple banana is amazing. Anything pumpkin, and anything with white chocolate. Man, now I want cake…oh shoot! I forgot my spelt carrot cake from last week (vegan!)
