almond chiaseed protein muffins.

ingredients

  • 1/2 cup whole wheat pastry flour (i used bob’s red mill)
  • 2/3 cup old fashioned oats
  • 2 scoops EAS vanilla premium protein powder (or the equivalent to 54g protein)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 15g chia seeds
  • 1/4 cup chopped almonds
  • 2 tsp nunaturals baking blend or the equivalent with another sweetener
  • 1 cup fat free greek yogurt
  • 3 egg whites
  • 1 egg
  • 1-2 tsp almond extract
  • 12 whole almonds

directions

  1. mix dry ingredients together besides almonds
  2. add wet ingredients to dry ingredients, mix well9-8-09 032
  3. add almonds , mix well9-8-09 033
  4. spray 12 cup muffin pan with nonstick cooking spray
  5. divide batter equally among 12 cups
  6. place whole almond atop each muffin cup9-8-09 034
  7. bake at 350 degrees [f] for 15 minutes or until toothpick inserted comes out clean9-8-09 036

makes 12 muffins. nutrition info per muffin: 100 calories, 9.58g protein, 9.41g carbs, 2.83g fat, 1.75g fiber, 1.25g sugar, 142mg sodium

    I love almonds! And I always try to get a good amount of protein into my snacks…I will definitely be baking these.

    Is it possible to make these without eggs or using and flaxseed egg equivalent?

      I am sure you could sub in a flax egg–let me know if it works!
