one last hurrah.

yesterday was the last special dinner request for marshall’s birthday week. it’s finally over! good riddance. ;)

in case you missed it, this was what the birthday boy requested for dinner all last week:

and that brings us to sunday. sunday’s meal was at my parents’ house for marshall’s final last hurrah.  he told me that he wanted me to make pork chops. hmmm. i had never made pork chops! i turned to google and looked for a recipe that caught my eye. when i saw this one for peach mustard pork chops, i was sold.

here is sunday’s complete menu:

  • peach mustard pork chops topped with fresh sautéed peaches
  • “funeral potatoes” AKA a grated potato casserole loaded with onions, sour cream, cream of chicken soup and two kinds of cheese
  • steamed broccoli
  • pear & spinach salad with creamy balsamic vinaigrette
  • bread pudding

dinner was scheduled for 6 o’clock. i had to go to the grocery store and get started on preparing the meal around 12:30.

how about we rewind a bit and do some math. i was up until 4:45 AM saturday night (or sunday morning), i was then woken up by marshall at 8:30 AM because he is clinically insane (or was just excited for football).. so that is 3 hours 45 minutes of sleep. FML.

marshall left to watch the packers game at his brother’s house around 10:45 and for some reason, i couldn’t fall back to sleep. grumble. i got up and had some coffee and a greek yogurt mess and watched the game show network for a couple hours. i was dozing off when momma b called to inform me that i better get a start on the potatoes if i wanted them to be done in time. those potatoes are pretty time consuming.

crap. no nap for me.

i went to the store, gathered all my ingredients and got to work in my kitchen. first i put 11 russet potatoes in a pot to boil, then i got to work on the bread pudding.

i used paula deen’s recipe for the best bread pudding.. and it really was!

ingredients:

  • 2 cups granulated sugar
  • 5 large beaten eggs
  • 2 cups whole milk
  • 2 teaspoons pure vanilla extract
  • 3 cups cubed french bread
  • 1 cup packed light brown sugar
  • 1/4 cup butter, softened
  • 1 cup chopped pecans

as you can see, it is really healthy.

this bread pudding was a cinch to make. i diced the bread and put it in a bowl. then i mixed the eggs, sugar, milk and vanilla.

i poured the mixture over the bread and let it soak for ten minutes.

meanwhile, i made the sugar topping.

i simply mixed the brown sugar, butter and pecans in a bowl.

i poured the bread mixture into a 9″ x 13” pan.

then i spread the sugar topping over the bread mixture.

i baked it at 350 degrees for 40 minutes.

SO simple. the sauce was easy, too, but i waited to make that at my parents’ house.

once the potatoes were done boiling i took them off the stove so they could cool.  then i got to work on the peach mustard sauce for the pork chops.  you can see the recipe for the sauce here, i added one whole fresh peach (smashed up) to the mix.

once the sauce was done, the potatoes were ready to be made. ay, ay, ay! i was so sleepy. i was hitting the wall. i kept working away, all in the name of birthday week ;) the potatoes took another 30 or 40 minutes to prepare..

i told you, they are time consuming! i had to grate the potatoes in my food processor and then mix all the ingredients in a large bowl. this may sound easy, but it was a LOT of potatoes and they were THICK. stirring the mixture was hard work! i think it should count as my upper body workout! :P

i set the pan of potatoes aside to be baked at my parents’ house. by this time it was 4:45 and i had to be to my parents’ house at 5:15. shoot, no nap time.

once i got to my parents’ i got to work on the chops.

i brushed them in safflower oil and sprinkled them with sea salt and coarse ground black pepper.

i put the chops on the grill over high heat, searing each side for a few minutes before transferring them onto indirect heat.

then the basting process began!

don’t mind the way i look, i was running on 3.75 hours of sleep, remember?

i basted and flipped for a good 20 minutes. i really hoped i was doing it right, as these were the first chops i’d ever made!

between basting and flipping, i sautéed the fresh peaches that would top the chops.

i put together the salad. it was the same one as saturday: romaine, spinach, slivered almonds and diced red pears.

i dressed it in this creamy balsamic dressing that is seriously delicious. i love briannas dressings!

we also had some fruit and fruit dip that was leftover from the birthday party.

erica’s fruit dip recipe is seriously addicting. to make it, i whipped a pint of heavy whipping cream (i added sugar and vanilla extract to the mix) ((you could opt to use cool whip, but i only like fresh whipped cream. i grew up on it and never looked back.)) and then combined the whipped cream with three containers of brown cow strawberry yogurt. so easy!

once the chops were 170 degrees internally, i took them off the grill and dinner was ready to eat! and i was ready to fall flat on my face because i was so tired.

the meal was delicious. i was so happy that my pork chops turned out moist and flavorful! i love learning to make new foods. cross pork chops off the list!
remember how i told you our bellies have a special reserve for cupcakes? well, it is the same case with bread pudding…

the sauce was a mixture of butter, sugar, vanilla extract and an egg. i served myself some sauce before adding the bourbon. bourbon makes me dry heave. sad but true. oh and sorry to talk about dry heaving while showing you the most glorious bread pudding i have ever tasted. where are my manners?

after devouring dessert, marshall opened this awesome card from my parents’. my mom found this card like 11 months ago and has been saving it for marshall’s birthday.

i would be lying if i told you i didn’t eat any more bread pudding last night. i did. it was delicious. but i was so full that it was painful. and this morning i wasn’t hungry one bit. i finally decided to eat something around noon. all in the name of bread pudding. it was worth it.

when marshall and i got home, we watched the latest episode of dexter (so good) before i finally drifted off to sleep.

and that, my friends, sums up marshall’s birthday week.

1. do you like to venture out with your cooking and try new recipes/preparing new foods or do you feel more comfortable sticking with what you’re good at? i am always up for a challenge or something new. even if i fail and the meal is a flop, at least i know i gave it my best shot.

2. what was the best thing you ate over the weekend? i ate a whole lot of delicious food, so it is hard to pick. but i think the bread pudding takes the cake! (or takes the pudding?)

    Marshall had an AMAZING birthday week! I can’t show this to my husband because then he will want cheeseburgers for every meal the week of his birthday.

    I tend to play it safe with recipes, but I’m going to try making meat balls soon, which is way out of my comfort zone.

    Best thing I ate all weekend: chocolate cake.

    We could celebrate our SO’s birthday together, they sound so much alike! Richie’s was yesterday and Packer game was biggest priority, we are having smoked pork chops and mashed potatoes for Bday dinner and I did make caramel apple cupcakes this year for treat, but last year was Apple Brandy Bread Pudding. :)

    Brian would looooooooooove it if I learned how to make pork chops! I never have bc I was afraid they would be dry… I guess I need to try it out before I make assumptions, right ? hehe I think the two sauces you made look divine (!) and i think I must try them!!

    I always like trying new things. My latest mission is to learn how to make Indian food at home…. now that I got to try some last week, I think I have an idea of that it’s supposed to taste like.

    The best thing I ate this weekend was my turkey chili yesterday afternoon… and the best part was that I got to eat it with my brother!! :D

    Best meal over the weekend was a tie between Friday’s pasta and then last night’s pasta-revisited. Dan agreed!

    Marshall is one spoiled boy – love that you made all his favorites, but I am sure you are glad that’s over! :D

    Your pork chops look great for being your first time! I wish I could mix sweet with meat – my husband hates it, but I may have to make your mustard sauce just for me!

    Off to steal some of your “moves.” I need to add strength training to my routine, which for now is only cardio and the occassional 30 day shred.

    oh man, thats such a good meal. Well, I am a sucker for all BREAD pudding but since being gluten intolerant, I have to suffer through it and believe me, its WORTH it!!
    Great job on the pork chops. They are pretty easy in the oven too. I was suprised at how fast they cook!

    I know I’m a chef, but could you be MY personal chef? your spread looks gorgeous. and it takes some serious “chops” to make chops (ok, lame joke).

    every so often, I’ll find a cool new recipe on blog (ahem, like yours) and try it out. I think blogs are a way cooler recipe exchange than your your average recipe site.

    As far as the best eats of the weekend, I had some kettle corn from the famers market, nothing beats that!

    Those pork chops look soooo good! I want to make them but don’t have a grill. I have a panini press/grill thing but that’s it. I wonder if I could still do it.

    Bourbon makes me want to dry heave too. Blech!

    Wow! You are a great chef and wife!! Normally, I don’t adventure out much of my food comfort zone. The best thing I ate all weekend was a humungous bowl of ice cream (probably equally half a gallon!) with peanut butter on top!! Yummy in my tummy!!

    Man, your husband is one blessed man having you as a wife. Can I celebrate my birthdays at your house, too? : )

    1) I like cooking the things I know how to make but do enjoy a challenge. I like finding new recipes on food blogs and giving them a whirl. I’ve never been disappointed trying something new.

    2) The best thing I ate over the weekend hands down was my friend Lauren’s homemade apple crisp with a generous portion of vanilla bean ice cream. So delicious and satisfying!

    I love that you made special dinners for Marshall during his birthday week instead of just going out for a fancy dinner. It definitely makes it more personal, a “labor of love” for sure!

    Oh my, Marshall is probably the luckiest hubby ever. It takes a truly amazing wife to dedicate an entire week of slaving over the stove to create her man his favorite meals. And you went so far above and beyond it’s ridiculous!!!
    That bread pudding has me dreaming of good it must have been. Paula Dean could NEVER make a dessert that wasn’t considered “the best.” Woman knows her butter!

    The best thing I ate this weekend was Butternut Apple and Kale Soup. So amazing and I’m sad it’s now gone. :(

    Wow, Marshall is one lucky man!! The spread looks amazing as well as everything you made for him. Being a dog lover, I am loving the card!!!

    I love trying new recipes but need to venture out some more. I’ve been cutting recipes I am wanting to try out of my magazines to reduce clutter and have been trying to make at least a new one each wk. Um, this wknd I made three new ones-go me!

    Impressive birthday meal! Perfect way to end the birthday week! Marshall is one lucky man!

    I can be a little hesitant at first with trying new things (referencing the fact that I’ve had all the ingredients to make homemade bread for months now and STILL haven’t even attempted it), but I really enjoy challenging myself! New combinations of foods, spices, or new foods all together.

    Yesterday, I tried out a pumpkin chili recipe that turned out really good…super creamy. But I think my favorite thing was the grilled eggplant that I made on Saturday. I dipped it in a marinade of balsamic vinegar, honey, olive oil, and garlic before grilling. DELISH and also the first time I’ve ever cooked/eaten eggplant! :)

    im still in shock about bday WEEK. I have seen every post, all week, and each day I think it cant top the last day, but you do.

    pork chops AND you tend your own grill, nice. I hate the smell of grill in my hair and even tho i dont eat anything grilled these days i even hate being around grills

    ok not kidding when i tell you my normal bedtime these days is 4:30am. I work come home and go to bed at 430am. I get up at 930am w/ Skylar. At best, I get til 930am. So yes, for the past many years…I run on about 4-5 hrs of sleep. Not a badge of honor but just sayin, I know what it’s like :)

    I have an aunt who, for the past 5 years, has made the same exact meal when we go over her house: pork loin and vodka rig. We just get tired of it after a while, that’s why my Mom and I prepare something different to eat every time we have family over. :-)

    I LOVE trying new stuff [hello, culinary school ;)]!! But sometimes it’s nice to stick to your comfort zone- I know I make awesome chili [IIDSSM] so I love to make it for company!

    Best thing I ate this weekend? Hard. Probably the delicious piece of raspberry key lime pie from my fave restaurant back home!!

    I can’t remember anything I ate this weekend because all these amazing photos just erased my memory. I agree with Kacy, I’d like to be married to you.

    Bread pudding is new to me. It looks like a glorified sweet roll which is right up my alley!

    Yes it was a stellar meal from beginning to end! Sad I didn’t spy a photo of your marvelous sous chef… :) The beginning with the fruit dip you had to finally hide from me and Marshall, the chops and sauce, and of course bread pudding – wow!

    I don’t venture out much hmmmm, yes I could list the 3 or 4 things I cook regularly right here but I won’t!

    And bread pudding, oh myyyy word. It’s my favorite dessert in the whole world. I’m completely in love.

    I can’t believe that you mentioned “Funeral Potatoes”. So funny. I learned about them from my mormon friends. :) We make them with frozen hashbrowns. So much easier.

        Maybe you’ll have to share the recipe. I’ve never tried them any other way. I always make them for potluck breakfasts at work. They are so yummy but so filling.

          Sure! Boil 10 russet potatoes. Let them cool completely (can stick them in the fridge or freezer to speed it up). Process potatoes through an electric grater (My food processor has an attachment) Mix potatoes with 12 oz organic cream of chicken soup (cream of mushroom if you’re vegetarian), 1 bunch diced green onion, 16 oz sour cream and 10 oz each of shredded medium Cheddar and Monterey Jack cheeses. Pour into baking dish and bake at 350 until warm–about 30 min. :)
