marshall is at the movies and i had to choose between folding laundry and blogging.

guess what i picked?

this morning afternoon (we didn’t wake up until 11—hey, we went out last night! and we didn’t go to bed until around 3 AM) i made a delicious brunch for marshall and i.

i wanted protein pancakes but didn’t have all the ingredients necessary and there was no way i was going to go to the grocery store.. so i decided to whip up some french toast & eggs.

before i got started on the french toast, i sliced the cantaloupe that i picked up from the farmers market yesterday.

it is ridiculous how juicy and flavorful this melon was. marshall & i killed the whole melon in a matter of hours.  hands down the best cantaloupe of the year. side note: i finally learned how to spell cantaloupe without having to backspace. i always used to spell it “canteloupe”.

for the french toast, i combined 3 cage free eggs, a splash of almond milk and enough cinnamon to make you blush.

susan is right.. cinnamon should be measured by the tablespoon rather than the teaspoon. or, better yet, not measured at all. just dump it in! that’s what i did today.

i gave each slice of bread a generous dunk on each side, saturating the bread with the batter.. i like to load my french toast slices up with the egg mixture.

i broke the yolks immediately after this photo. the boy hates runny yolks. i know, i know.. i am not quite sure what is the matter with him ;)

i fixed marshall’s french toast with smart balance & momma b’s homemade strawberry jam:

i actually cooked myself some egg whites on the griddle and omitted the yolk all together. i then sandwiched the egg whites between my two slices of french toast and drizzled the sandwich in maple syrup.

the french toast was cooked just how i like it: crisp on the outside and soggy on the inside. french toast sandwiches need to happen more often.

there was a nice balance of relaxation and productivity today. we watched zombieland (while polishing off that cantaloupe) and then cleaned up and ran some errands.  i snagged a peach perfection jamba juice (16 oz) while we were out and about. it is my favorite flavor of jamba juice!

when we finally made it home around 7 PM, i got to work on dinner.

i had pressed some tofu overnight in my tofuXpress.  i diced the tofu and coated it in the star of the show: trader joe’s black pepper sauce. a new-to-me product.

in a separate skillet, i stir fried broccoli, snow peas, red bell pepper, celery, bamboo shoots & water chestnuts. i doused the veggies with a lot of the TJ’s black pepper sauce.

marshall was on brown rice duty. two things i hate to do: make rice & make pasta. he is a sweetheart and always does it for me.

i combined the tofu with the veggies, finished it off with some low sodium soy sauce and dinner was served!

i felt like i had been lacking veggies in my life lately.. this definitely filled the void.

if you live near a trader joe’s, you should pick up some of the thai black pepper sauce. two thumbs up! oh, and for all you vegans out there, the sauce and this meal are both vegan!

well, i better close up shop. monday morning sales meetings come early and i need to get some sleep.

hope you all had a fantastic weekend! i have really enjoyed seeing the healthy living summit recaps, it looks like everyone who went had a great time.  and if you weren’t in chicago, i hope whatever you were up to was all you hoped for and more :)

1. what is your favorite stir fry ingredient? water chestnuts, hands down.

2. pancakes or french toast? i am more of a french toast girl. i think it is because i have a slight obsession with bread and cinnamon.

    Your French toast looks amazing – love the egg white sandwich idea, yum. I do the same thing with spelling cantaloupe, I had to retype it myself. Water chestnuts totally make a stirfry, I need to remember to buy them more often.

    i HATE to make pasta and rice too!! I always fail at it for some reason!!!!! your stir fry looks AWESOME. i love stir frys these days. AND yo french toast! YUM! <3 sunday mornings!

    I’m a lover of french toast, I cant get my pancake consistency right. NEVER!

    I want a stir-fry, that looks incredible.

    trader joe’s black pepper sauce. a new-to-me product = OMG Thank you!!! I have never seen it! There is a red labeled on in the same exact bottle/packaging as the black pepper one called like sweet chili or something along those lines…anyway, it’s SUPER flavorful for stirfries or dipping, but it does have wayyy too much garlic in it for me. i hate garlic but if you can hang w/ garlic, the red label sauce is really good.

    i adore water chestnuts too..and hadnt bought any in years. til like 2 weeks ago. and they are still waiting in my cupboard waiting to be used!

    i love pancakes, but am always too lazy to make them in the mornings (especially after workouts!). french toasts appear more often on my weekends :D gotta try your egg whites french toast sandwich sometime!

    GAH i just typed up a whole response and it deletedd *tear* okay anyways, your french toast looks PHENOMENAL! omg so so good! i havent made french toast in so long, I think because jason is more a pancake/belgium waffle guy so hes happy with that! or cereal. For me, i think i am more of a pancake girl, but I only say that because whenever I make french toast its soggy! teach me your ways!!

    i love stirfrys!! i think one of my favorite things to have in it is onions! i love when they still have a bite to them, they add a natural sweetness that is just SO good!!

    I have been making so much brown rice lately, I have become immune LOL…I just place it in the pot and walk away, an hour later DONE!

    Mmmm, I love the idea of your egg whites in the french toast. I’m usually so apt to do the sweet on sweet with french toast by adding bananas or strawberries in the middle, but I LOVE sweet and savory so this has to be fantastic!

    Favorite stir fry ingredient is pineapple or mango. Again, sweet and savory combo never fails.

    Ohhh, hard one!!! I’d have to say french toast unless it’s pumpkin pancakes. Ugh, what a hard question though!

    thats too yummy. My husband loves running yokes so I have to be careful not overcook the egg or break the egg yolk.
    How do you sleep in till 11am??? I am jealous! If I go to bed a 3am the latest I can sleep is 7am. I am a freak of nature I tell ya.

    I don’t discriminate between either. I make french toast more often at home, but opt for pancakes when out. And cinnamon should always be involved if possible.

    French toast sandwich!? Touche lady!! I hate when you wake up after a night of fun and want something specifically and you don’t have it….boo!

    I’ve never seen that black pepper sauce before but will be on the lookout next time I go. My favorite stir fry ingredient is water chesnuts or bamboo shoots.

    I have a hard time spelling cantaloupe too. That and cauliflower.

    I like broccoli in stir-fries. And pancakes. Not together.

    We had french toast Sunday morning too! I love slow breakfasts with the husband on Sundays :)

    Great looking dinner! I love stirfrys. I am all about the protein- LOVE tofu, tempeh or chicken. But for veg, I love me some snow peas or baby corn :)

    French toast, alllll the way. Not a huge pancake fan, though I crave them every so often.

    I love broccoli in stir fry! Also, sprouts make everything better.

    Pancake v. french toast: hm, probably french toast, because I am bad at making pancakes. :)

    I LOVE water chestnuts too, I have no idea why I never buy them.

    I’ve never made french toast, but I think I need to do so one of these days.

    I don’t like runny yolks at all, Marshall knows what’s up.

    I love peanuts or cashews in stirfrys. Yum!

    Can I choose waffles instead? If not…I guess it just depends on my mood in the pancake/french toast battle. :)

    you know what? i’m REALLY glad you posted about that sauce because i can’t lie i’ve been waiting for someone else to try it before i buy it! i still have a jar of their enchilada sauce that i’m kind of waiting to use but i’ve just felt no inspiration to use it lately! so maybe i should wait to use that beforeeee i buy that one? hahaha look at my conversation on your wall with myself.

    ANYWAYS french toast sammies need to happen in my life. but i just love eating out of bowls too much!

    I too could eat water chestnuts like chips! YUM!

    I’m going to pick up the pepper sauce, although I still want to try the red curry sauce too.

    I actually don’t like eggs with syrup, never have! I’m much more of a pancake or egg free french toast type of girl.

    you made me realize that my life has definitely been lacking in the french toast department…I can’t even remember the last time I ate it…the horror! Yours looks fantastic though and now Ive got a major craving!

    My fav stir fry ingredient is broc. I never ever make a stir fry w/o it… that and mushrooms… Oh, and tofu. I’m addicted. Making a stir fry for dinner tonight acutally! I some how got out of the habbit. Used to have one at least once a week.

    French toast all the way. And my boyfriend has an amazing recipe for French toast! The secret is lemon zest and orange juice. :)

    mmmmmm brunch. Homemade or out- best meal hands down! Great job on the cooking. I <3 water chestnuts- we always use them in our stir fry. I also enjoy baby corn and broccoli slaw in stir fry. I like both french toast and pancakes…depends on my mood..usually pancakes (although I did make a pretty slammin vegan french toast recently)

    Brunch is the best thing EVER! I’m definitely more of a pancake kinda gal although I won’t discriminate against French Toast if someone wants to make it for me ;) haha. As for stirfry, I’m all about the baby corn! Bring. it. on!!!!

    1)my favorite stir fry ingredient is probably mushrooms, although Dan hates them, I love sugar snap peas too

    2) I’m a french toast girl all of the way! I do love pancakes and waffles on occasion though

    My current favorite stir fry ingredient is cabbage, I love the crunch. I like to add tofu with it too.

    I’ve never made french toast at home but I think I’m going to try soon.

    I made the best chocolate protein pancake last week. It’s my favorite breakfast right now. i would make it everyday if I’m not rushing every morning.

    Fyi, I don’t like runny egg yolks either…the texture taste funny to me, a little slimy :( I like eggs cooked all the way through.
