flashback friday: where did i leave off?

hey there!

thank you for all the supportive comments on my last post. i firmly believe blogging should be a fun thing, not an obligation. bloggers who feel like they HAVE to post, regardless of their schedules, usually end up with less than stellar content.  plus, why should someone have to say they are sorry for not posting? i will never be sorry if i go a day (or three) without posting. you can stuff your sorry’s  in a sack! (seinfeld, anyone?)

anyway! yesterday i met some high school friends for lunch because  one of them is moving to chicago to pursue his PhD! go danny!

meals

we went to thaifoon at the gateway.

i went with a vegetarian dish:

SHANGHAI STIR FRY TOFU Tofu with mushrooms, sugar snap peas, asparagus, green beans, red onions, chilies and Thai basil.

i served it over brown rice.

one of the gals we were with asked me if it was hard to always remember to take a photo of my meals.  it was funny because i didn’t even think twice when i whipped out the camera, but it must have been so strange for her to see. i told her that it is second nature for me, although i have scaled back quite a bit on taking food photos of everything i eat.  but i couldn’t pass up showing you this savory stir fry, it was absolutely delicious.

quick thought.. i used to never order tofu dishes when eating out.  it wasn’t because i don’t like tofu—i LOVE it—it was because i was so concerned about my macros.  read: there was not enough protein in tofu to balance out with the carbs coming from the vegetables and rice.  so, instead, i always would order chicken. now, don’t get me wrong, i love chicken and rarely tire of it. but it was so nice to just order the tofu and not care about the carb to protein ratio of my meal. end of quick thought.

moves

yesterday’s workout was a run, outside, at 6 PM. when it is the very hottest out. blech! i had plans to go out last night, so marshall & i got our daily walk with the pups in early. i decided to run laps around the park (there is a large track, not sure the distance around.. probably nearly 1/2 mile).. first i tried running a lap with randy.  guess what? randy is NOT a runner. so, after one lap, i switched to running with penny.  she did a much better job! although she kept trying to trip me.. little scamp. no idea how far my run was.. but it was HOT. i hate running outside in these temperatures.

meals

last night’s dinner was pretty random but AMAZING so i have to share.

first off, i was able to use my new handy egg slicer i purchased from crate & barrel.

you can slice the egg, wedge the egg, or do both and it chops the egg up in all directions. that is what i did!

i paired two hard boiled eggs with two garden fresh tomatoes and some fresh ground sea salt & black pepper.

tomatoes fresh from the garden have to be one of my favorite foods on the planet. i think it is a tragedy that i grew up thinking i hated tomatoes!

i ended up mixing in a dollup of greek yogurt for moisture and then eating the eggs & tomatoes on a dr. kracker 3 seed flatbread.

these flatbread crackers are phenomenal. so seedy, so crunchy.

last night i went out with friends, it was danny’s going away party. like i said, he is moving to chicago. that means a trip to chicago is in my near future! (too bad it is not this weekend.. read: healthy living summit!) it was a harry potter theme. i’ve never read nor seen harry potter, but there were some die hard harry potter fans there.. including my best friends!

time for flashback friday!

i am not sure where i left off on my honeymoon recap and i don’t really feel like giving y’all a play-by-play, so this flashback to my honeymoon will just touch on some highlights! plus, i don’t have the majority of my photos as most of the photos were taken on my point and shoot.

things we did that i have no photos of:

  • we swam with dolphins!
  • got a couples massage that was a tad painful for me because of my sunburn :(
  • ate an authentic mexican breakfast.. of course i got huevos rancheros!
  • shopped til we dropped downtown
  • hung out on the beach and took self portraits.. sad i don’t have those :(

on the wednesday of our trip, we took a catamaran on a snorkeling tour and we were in the sun for 6 hours straight. i got a gnarly sunburn, but i had a great time :)

they fed us lunch on the catamaran, but it was an unappetizing wrap (top right part of the plate) so i didn’t eat that and loaded up on chips, pico & guacamole!

we walked back to the resort from the marina. i was so badly sunburned so i walked with a towel on my back :(

one night the restaurant had a carnitas bar. look at all that meat!

this was by far the best resort food i ate the entire time. so good.

we ate at the resort’s steakhouse. the meal started with a glass of sangria and warm rolls.

the menu only had a few selections, we got a caesar salad to share.

i ordered the surf & turf.. which, as i expected, really wasn’t good.  i am telling you, all inclusive food is never that great.

i didn’t eat this and marshall wrapped the steak in a napkin and put it in his pocket! wanna know why?…

to feed it to these sweeties! there were so many cute stray dogs on the beach. they deserved steak ;)

we ate at a restaurant on the beach called “sandbar”. i got a trio of tacos: chicken, fish & shrimp.

sadly, this is the store where i dropped my DSLR camera—right off that counter below– and it broke :( no worries though, i have a new one now!

one night the restaurant at the resort had a dessert crepe bar. i was all over that!

i had a crepe topped with caramel and apple and served it alongside some coconut ice cream. yum.

there was a restaurant right on the beach called tobasco’s.  we ate there a few times but i only managed to capture one meal on my DSLR (the others were on the camera i lost)…

marshall got the enchiladas (of course) i got the puntas al chipotle.. i thought it would be fun to try something i’d never had! it was slices of beef sauteed in mild chipotle chile sauce served with rice, beans & tortillas.

both dishes were authentic and tasted fantastic. i love mexican food.

watching the sky get darker and darker over the ocean was so nice.  by the time we finished our meal it was totally dark.

there were many, many, MANY walks on the beach. i wanna go back.

there you go.. the rest of my honeymoon in a nut shell! i know this post has been long, but you probably won’t hear from me again until sunday.. so it all balances out!

any fun weekend plans? aside from all you ladies attending the healthy living summit, that is! totally jealous, wish i was there!  tonight i am going to get sushi with the girls and tomorrow we are going to the soccer match. the farmer’s market is on the agenda and i also plan to go trail running with kristen sometime over the weekend.  gotta enjoy summer while it is still here, right? ;)

1. do you have a “go to meal” that you order when at a mexican restaurant? i am never consistent, but i do alternate between fajitas, quesadillas & burritos. marshall is all about the enchiladas.

2. what is your favorite cracker? i have fallen in love with dr. kracker crackers, but i always love a good triscuit.

    Great recap, Janetha!

    In San Antonio where I grew up there is never a shortage of good Mexican restaurants. I’m a chicken flautas girl, ALL THE WAY with guac and sour cream! Que bueno! I guess it’s a good thing I don’t live in Texas anymore…for my waistline, that is!

    1. I love fish tacos, although they are way better down south than in the northeast (philly)! A good ole 2-lb veggie burrito works too!

    2. Favorite cracker…do goldfish count?? I still love them even though I’m 24. Goldfish + peanut butter, yes please.

    Mmmm triscuits. I love them. I’m pretty inconsistent at Mexican restaurants, but if there’s a veg enchilada option or burrito I’m likely to go with that.

    Love all your honeymoon pictures. All of Marshall’s enchis look quite delicious and the scenery is gorg.

    Wow what an amazing honeymoon! Beach, shopping, and amazing food!!!!!!!! Oh and the best part, LOVE!!!!!!!!!!!!!!!!!!! U two are so sweet! Im really happy for you guys, and yay for being married to the love of your life : )

    I want to say too, your last post, I LOVED EVERYTHING ABOUT IT! I really feel blogging should be fun too, and I dont workout out everyday, dont like to take pics of my boring meals everyday, unless its amazing or special, and basically , I live my life to the FULLEST day by day! I really dont have planned days, I just live and love ! So AMEN to your last post and you will never lose me as a reader! love u! xoxo

    I love triscuits–and at mexi places—I order tortilla soup, fajitias, taco salad, tacos—and thats about it!

    I love mexican food, but it upsets my tum tum sometimes. :( the seasoned chicken is always so good. i love burritos (oops, i just typed buttritos), quesadillas, and i’ve ALWAYS wanted to try a stuffed chile pepper. huevos rancheros sounds goooood.

    Love flashback friday posts. I did one today recapping some of my wedding details. I find posting about the past makes me happy. I’d rather blogging make me happy you know?

    I am obsessed with Harry Potter so I would have LOVED that party.

    You guys are so sweet to find the dogs. I bet they were thrilled. I always wondered how the food would be at an all-inclusive place.

    At mexican food, I always order fajitas. I love enchiladas though!

    aww i love that you guys fed the beach doggies! cute!
    the mexican place by me has redic chicken tortilla soup-yummy broth (it tastes like real homemade stock, not sure if it is…), chunks of chicken breast, and chunks of avocado. anytime i order other things there i feel a little dissapointed.

    Thanks for sharing these photos and thoughts.
    I also hated tomatoes up until 2 years ago, now I eat them like apples.
    Oh, and I have also had to walk with a towel over me on the beach..not fun!

    I used to be the same way about certain things… I would order the tofu, but NOT have the rice… now I just balance it all!

    LOVE the egg slicer. Jealous, yo.

    Anddd love your honeymoon recap. I want to go to Cabo now!!

    I am a burrito/fajita girl, all the way. I do love a good enchilada, but I always make them at home!

    Wheat thins are my fave, but I also love Kashi crackers :D

    Dr. Krackers are SO good. I had a half of one pre workout today and it was simply perfect. Love the egg slicer. I need one of those bad boys. And fresh tomatoes = summer for me. The night out looks like fun. ahhh- your honeymoon pictures make me want to go away agian right now. I need the relaxation (and yummy mexican food). I love a good taco salad or quesadilla at a Mexican restaurant.

    I love Mexican food, too! I don’t have a go to Mexican meal but really love it all. One of my close friends is Mexican and we used to work together. I loved it when she brought leftovers and shared with me… She makes a really good meat dish, cooked in a spicy chile sauce. I tried to recreate it once but made it way too spicy… She also makes really good potato dishes – so simple, but so good. Okay, now I’m really hungry and want some authentic Mexican food…

    That egg slicer is so cool! I definitely felt like being vegetarian after my BFL stint and do not miss trying to balance the macros :)

    I LOVE Mexican food but not sure I could eat it every day? LOL….Jay would’ve totally given up his steak for the pups too – could you imagine both of them on the beach and the dogs would surely follow LOL.

    My favorite picture of all is the one you all drew in the sand!

    Go to mexican is always fajitas or ceveiche. But during the holidays, we always go for TAMALES. heck ya.

    I used to only really order enchiladas, but now I am a little more adventurous. But at my favorite spots, my #1 choice is enchiladas. Depends on what day of the week it is, I tend to only chose heavier items like that if it’s the weekend. I tend to bend a little more on 1 weekend meal.

    Hmmm, crackers,not sure I have a favorite. Dr Kraker looks really good, but I think those may end up being a trigger food for me. I’d been buying Wasa crackers, but I think I was eating them almost everyday, so I didn’t buy anymore.

    hey lady…i am catching up on my reader and saw your last post. girl. dont apologize for anything. i am guilty of apologizing and feeling badly not commenting on ppl’s blogs. you seem to have shed that whole thing better than I am doing. I have cut back on the commenting but i still have tons of guilt.

    Anyway though on to you…I am so sick of taking pics of things JUST for the blog. I carry my camera everywhere and take pics and sometimes i even feel silly for doing it…but i swear that’s what readers want so i do it but yeah, in light of everything that has transpired this week for me (I blogged about some major sh*t that went down)…I need to regain some privacy and in doing so, I hope I can be less a slave to the camera-lugging. However knowing me, Ill still do it.

    Anyway girl just want to say blogging is a HOBBY for all of us. We all need to remember that..and dont ever apologize for changing up your hobby :)

    Such a beautiful honeymoon! I want to get married just to go on a honeymoon. No, I take that back. I want to get married so I can go on Christians health insurance and save money.

    Sorry your friend is moving to Chicago. Three of my friends recently moved there for work. What’s up with Chicago? They say it’s a sh*thole, but I still want to visit. Anyway, enjoy your sushi this weekend!

    Aww…those poor stray pups. I love that you guys saved some steak to feed them.

    I’d have to say that Kashi and Dr. Krackers are my favorite crackers, although Wasas have their place in my life too. I think they all serve different purposes and go well with different toppings. :D

    at mexican restaurants i loveee getting something with black beans. they’re always sooo flavorful! especially if you order like a black bean salad with guac & salsa! mmmm.

    my fave crackers are HANDS down dr. kracker cherry semolina!

    I think I see an anniversary re-visit in your future :) When we were in the Caribbean for our honeymoon, there were stray dogs everywhere. I was amazed at how sweet they all were. It was almost as if everyone on the island owned them. They looked well-fed and were happy to just be in a human’s presence. I didn’t feel as bad since they seemed happy.

    That Thai restaurant sounds awesome. I looked at their menu and I would jump all over the Evil Jungle Princess Tofu. Have you tried that dish?
