flashback friday: they’re coming out.

we made it! it’s the weekend! woooooo. can you tell i am excited?!

mainly because marshall is home from his week-long work trip. he got home super late last night and i am just dying to hang out with him.. hairy face and all. (although i secretly hope he decided to take a razor to that sweet face of his while i was at work today. only time will tell.)

hope you all enjoyed danica’s guest post! i know i, for one, cannot wait to make those meatballs! i am going to whip up a batch on monday or tuesday and use them for all sorts of things. i have ideas, people. it’s gonna be awesome. spicy and awesome.

yesterday (thursday) i didn’t take photos of 4 of my 5 meals. and it was great. the funny thing is i still care about presentation even when i know there is not going to be a photo.. what can i say? i like to eat food that is served in an aesthetically pleasing manner.

i said four out of five meals. i did photograph one of my meals yesterday.. dinner.

POM wonderful contacted me and asked if i would be willing to try their 100% pomegranate juice and review it on the blog.

i love me some pomegranate, so naturally i said, “you bet!”

if you have been reading my blog for a long time, you know i don’t prefer to drink my calories. so, instead of swigging down a bottle of delicious 100% POM wonderful pomegranate juice, i decided to do what i do best… make up a recipe! well.. i guess me saying that is what i do best it is debatable. personally, i think i am best at sleeping in or procrastinating. but for now, let’s say i am real good at making up recipes, deal? deal.

meals

thyme, almond & flax crusted chicken with a pomegranate reduction glaze!

toot, toot. there goes my horn. this was delectable.

serves two. (or one lonely janetha b. with leftovers for the next day.)

ingredients:

for the chicken:

  • 2 boneless, skinless organic chicken breasts, butterflied in half
  • 1/4 cup whole almonds
  • 2-3 TB fresh thyme
  • 1/8 cup flax seed or ground flax
  • 1/4 cup egg whites

for the glaze:

  • 8 oz POM wonderful 100% pomegranate juice
  • 1/2 an onion, diced
  • 2 cloves garlic, minced
  • salt and pepper, to taste
  • cornstarch and water, as needed to thicken
  • pomegranate arils, for garnish

step-by-step time!

-preheat oven to 435 degrees [f]

-place a medium skillet over medium/high heat, spray with cooking spray or pour a little olive oil on there.

-dice your onion and mince your garlic.

-add the onion, garlic, salt and pepper to the skillet.

-stir frequently.

-meanwhile, make the coating for your chicken! put the almonds, thyme and flax in the handy mini food processor that you won from averie.

-pulse.

-it will look awesome:

-once the onions are cooked, pour in your juice. stir frequently.

-coat chicken in egg whites and then in almond mixture.

-place chicken on foil-lined pan that has been sprayed with cooking spray (this is my trick to not having to wash the pan when i’m done with it. you can skip the foil part, but then you’ll have an extra dish to wash!)

-don’t forget to stir your sauce!

-pop your chicken in the oven and bake (uncovered) for.. oh.. about 20 minutes or so. maybe less, actually. check it after 15 minutes, just to be safe.

-while the chicken is baking, you should mix your cornstarch+water and pour it into the POM sauce. stir, stir, stir.

-now this process is weird. it will get really thick, but then you want to thin it out again with a little water. so let it thicken.. then thin it out again with water and bring it to a boil. then immediately remove it from the heat and it will become the perfect glazey consistency. i promise.

-when you chicken is cooked through, pull it out of the oven.

-serve two pieces of chicken (which is actually just one breast, split down the middle) with half of the glaze. top with pomegranate arils for garnish!

i served mine with a side of mashed cauliflower, which, if you close your eyes and don’t think about it, tastes just like mashed potatoes!

for the cauliflower, i simply steamed a head of cauliflower and mashed it with a bit of almond milk, salt and pepper~ using my potato masher. super simple! and super low carb.

FRIDAY!

this morning i woke up and completed my wake up call challenge before heading out the door to physical therapy.

since i was on the go and had no time for breakfast, i grabbed some stuff to eat in my car. no, not ideal.. but it worked.

i had a fuji on the way to PT:

and then i took some photos for you guys to see how i spend my mornings, twice a week.

they lay me down on a doctor’s office bed with not one but TWO pillows. luxurious.

and then they put heat on my ankles for 15 minutes. i read blogs on my phone.

then the gal comes in and does the ultrasound for about 5 minutes on the injured area. no photo.

then the doctor comes in and massages the injured area for about 10 minutes. this is painful, but in a good way. it is my favorite part of the appointment. no photo.

finally my treatment is finished of with medicine that is sent through my pores with some electric thingamajig. no clue how it works!

but i am getting better so today only my right ankle needed the medicine :)

random breakfast, but it worked!

lunch was a little more structured. it was my final portion of the garbanzo bean turkey bake that i made earlier this week. so sad to see it go! i will have to make more soon.

flashback friday!

if you are a long-time reader, you know what i was doing a year ago today. i was recovering from the second most painful surgery ever. (the first was when i broke my humerus.)

yep. i got my tonsils out on may 5, 2009.

a clean shaven marshall took me to to hospital.

a little history. i used to ALWAYS get sinus infections or bronchitis… and we are talking, 7 or 8 times per winter. i was always sick. my bosses always made fun of me because i was constantly sick. but i wasn’t faking! there was something seriously wrong with me. i was healthy in my diet and exercise, yet i was always getting super, duper sick.

well, they wanted to yank out my tonsils. so i let them.

and it was miserable.

i remember waking up from the operation and feeling like i had razors in my throat. every time i swallowed, i wanted to cry. and i usually did.

they gave me lidocaine suckers to help numb my throat:

luckily, i was in good hands. my mom took SUCH good care of me! i was staying at her house. me and penny bean.

my sweet, sweet marshall brought me flowers the day i had the tonsils taken out.

and what’s even better (and why i am marrying him, essentially) is he brought me nielsen’s frozen custard.. aka the BEST frozen treat on the planet. better than ice cream, better than fro yo. mark my words.

i was a swollen wreck, but i was happy about the custard. can you tell?

the bad part was i couldn’t eat! i had just started my blog and now the only thing i could feature was popsicles, protein shakes and applesauce. for like.. two or three WEEKS. i was always so hungry!!

i would cook food for my family.. and they would eat it.. and i couldn’t.. and i was so hungry! man, it was the pits.

but let’s look at the bright side! because that’s what i do :)

being on a liquid diet made me try my first green moster ever!

and i got to eat a lot (AND I MEAN A LOT) of ice cream!

and i was always doped up on liquid lortab. (yes, that is a bright side.)

YAPPLESAUCE was born! greek yogurt+applesauce+cinnamon~ susan though up the term :)

and i had over a week off of work and hung out with these fine fellas:

and ate a lot of popsicles.

the dogs helped.

i hated not being able to exercise, but i did manage to take penny on a few walks.

and eventually.. i was able to eat real food.. (about 2 weeks later)

i was in pain for about 5 weeks after the surgery.

BUT~ guess what? I DID NOT GET SICK ONE SINGLE TIME THIS PAST WINTER! i did get sick in the summer (unrelated to my sinus/bronchial issues) but other than that.. nope. nothing. i have been healthy as a horse. (well, healthy as a real healthy horse.. i am sure there are some sick horses out there!)

so, all those weeks i yelled “THIS IS NOT EVEN WORTH IT! KILL ME NOW I WANT TO SWALLOW PAIN FREE AND EAT LIKE A NORMAL PERSON!”.. well.. i was wrong.

and it was worth it.

    the only thing that can ever make surgery better is ice cream. or frozen custard, apparently! wow. there’s a place in nyc called shake shack that specializes in that stuff. it makes my life so very happy.

    your poor ankles, though! but you look beyond adorable in the picture of you on the table. why do i not ever ever ever look cute when i hold the camera out and take a picture of myself? possibly because i am not janetha. but i still love you.

    LOL lady thanks for the shoutout, but I didn’t do a flashback this morning!! I didn’t have time to :-( But since you wrote me in, I might just have to do one tonight ;-)

    Glad the operation was worth it!! I couldn’t imagine an all liquid diet. Yikes!! I possibly will have to get gum surgery in the future, and I’m dreading the days (aka months) after.

    This weekend was going to be my baking weekend using POM juice as well! I have a few recipes :-) But I’m definitely saving yours for the glaze. I marinated some chicken in POM juice a while ago, but it really didn’t soak up the flavor. I’m sure the glaze is MUCH better.

    Question time!
    1. Not really no. I did have an endoscopy done a couple months ago, which I guess technically is surgery since I was put under and all. It was weird!
    2. No plans :-( Was going to go home to visit the madre, but I’m going home a lot lately, and it’s a lot of gas money. My mom understands. We’ll hopefully do something when all my siblings are back in the house!

    That is SO funny. I recently ( about two years ago) got my tonsils out….GREATEST thing I’ve ever done. I never (knock on wood) get sick any more either! I used to be sick ALLLL the time! Great job with the Pom recipe (that stuff rocks). Your dish looks totally gourmet!

    Whoa impressive dinner!
    I had a major jaw surgery AND my wisdom teeth taken out at the same time when I was 17. Yeah, I looked like a chipmunk for a good two weeks.
    I sadly will not be with my mom this Mothers’ Day…she’ll be here next week for graduation though:)

    Ick! Wisdom teeth were painful enough…I couldn’t imagine tonsils. Glad it seems to have been worth it in the long run though.

    I had to have reconstructive surgery on my elbow when I was 17. It was from when I got hit by a car and being thrown into the road left me with a big hole in my elbow. Basically the skin on my elbow now used to be on my upper arm and is now stretched to cover it. So weird. And gross I realize after typing it. Hope it didn’t gross ya out too much!

    I’ve had my wisdom teeth removed (a few months ago…ouch!) and a number of surgeries on my ears because I was born legally deaf, but now I can hear (after tons of surgeries and years with a hearing aid), so yay for surgery!

    My only surgery was when I got my wisdom teeth removed, so nothing too serious (knock on wood). Hope your ankle gets better, love!

    And for Mother’s Day? We’re all going out for dinner! If it’s nice out (which is doubtful), I’ll probably take a looong walk with my mom.

    They’ve been eyeballing my tonsils for like 10 years. I keep ignoring them. I don’t get sick much so it doesn’t seem worth it, at the moment. They used to swell up something awful all the time though but it’s been a while since my last flair up. YAY!

    1. I had a rod put through my upper knee when I was 9 for a Broken femur. That sucked a whole lot. I didn’t walk for 6 months. Moved on the a brace (robot girl) and crutches and then a walker. LONG recover!! And that my friend, is why I have a “bum” leg. :)

    2. My Mama is still in Hungary with my Papa on their vacation. I miss them. I leave for vacation the day they get back so I won’t even be able to see them until after I get back. We will celebrate then and do something special.

    Love your necklace! Where’d you get it?

    I had my nose broken by a softball in the fourth grade, so I had that fixed, not fun! I actually got my mom to make me a milkshake (not something I’d normally get) and I couldn’t even taste it! Having your nose full of packing keeps you from being able to taste anything.. and also makes you a mouth breather.

    Mother’s Day – my sister and I cook dinner for my mom, she thinks this is the greatest thing ever.. mostly because when we started the tradition neither of us really cooked so it was a very special occasion.

    I had my tonsils taken out when I was 19. I had suffered with ’em my whole life so I was HAPPY to see ’em go! I totally know the feeling! :-D

    I’ve contemplating getting my tonsils out-like you I used to get sinus infections, strep and bronchitis every yr (February and October to be exact which sucks because I really like those months) but once I quit smoking, it magically went away? Connection….hmmm, I wonder :)

    I had PRK surgery which is similar to LASIK but a little more risky. It was the best thing I’ve ever done. I can see the clock in the morning, nap and wake up without dry eyes and my vision is 20/15!! Anyone that is thinking of doing it should go to the doctor now and make an appointment. You will not regret it one bit. I promise!

    Hey Janetha, I had one question about your diet with the body for life. Do you consume alcohol? And if you do, is it reserved for your free day? I was just wondering because I am trying to cut out sugar and eat clean–much like a fusion of body for life and clean eating diet.
    Another thing, I have a difficult time holding back from eating/nibbling on sweets when visiting family or friends. I’m fine when I am at my own house, but when I go out I let everything go and end up feeling horrible for overindulging. Do you have any tips on preventing overeating and gaining some discipline?

    Oh yum! That chicken and sauce looks fantastic! I am so going to try it when my Meatless May challenge is over.

    I’ve had more complicated surgeries than I can list here, probably 6. The highlight was having both of my femurs broken and 1.5 inches of my right leg put into my left leg. Long story as you can imagine that I really am going to write about on my blog someday.

    Mom’s day will be spent with my 5 year old…or rather, I like to spend my Mother’s Day away from my 5 year old. As much as I love him, a spa day or movie matinee day is a nice treat.

    That was a good Flashback Friday! Yum, I would love to eat nothing but ice cream but it would suck being in pain for so long. Glad it was all worth it!!!!

    I had surgery to remove an ovarian cyst when I was 17. (It was the size of a grapefruit and I had no idea it was there! That was a rupture waiting to happen for sure!)

    Mother’s Day: going to spend the afternoon with my three beautiful little girls!!! Wish I could be with my BF mom too but not this weekend …

    Ouch! Surgery definitely sounds painful… Thank goodness I’ve never had one! :P But it’s early in my lifespan yet, so I wouldn’t be so sure about the future… :P

    I think I might have to go buy some POM just to make this recipe. Is it sad to say I’ve never had POM before? Now might be a good time to try it!! I love the cauliflower mash, too!! :)

    I had NO idea getting your tonsils out was that painful!! I’m sure it was worth it in the end, but OUCH!!

    I so wish my mom lived closer…I miss not being able to celebrate Mother’s Day with her. :( She’s my bestest friend, too!! Enjoy your day with yours tomorrow!! I can’t wait to hear more about the photo shoot!!

    Fun weekend agenda!

    Never had any major surgeries… I did have an endoscopy to look at my upper digestive system… they basically told me I had terrible acid reflex, gave me pills the size of jujubes and sent me away.

    This weekend I am spending mother’s day with Nick’s fam because my mommy is 700 miles away! But I sent her an edible arrangement and I am giving her a call :)

    You got to eat ice cream after your tonsillectomy?! NOT FAIR!! I couldn’t have dairy after mine when I was 10, which blew. Everyone was like, oh you’ll be fine, think of all the ice cream you can eat! I went to the grocery store and picked out about fifty cartons of ice cream, which was awesome because usually my mom didn’t let us have it in the house. And then after surgery the nurse gave me a list of foods I could and couldn’t eat and NO DAIRY was written on it in huge letters. I lived off of Jello, applesauce and popsicles. My brother got to eat all of my ice cream. It was so sad. Okay, I’ll stop ranting now.

    Besides my tonsillectomy, I’ve also had a knee arthroscopy and got my wisdom teeth removed in the hospital cause I’m a big baby. I hate waking up from anesthesia- it makes me so nauseous!

    My momma and I are running a 5k together on Sunday…should be fun! Hope you have a great time with Momma B!

    Hey girl – loving that POM recipe. I could totally do that veggie style with tofu or some other protein source. That glaze alone sounds fantastic! My major surgery was having wisdom teeth removed my senior year of high school. UGH

    The only surgery I’ve had was getting my wisdom teeth out. I hated not being able to exercise too and even cheated a few days before I was allowed to go running. I just missed it so much!!

    I think I’m going to go to my mom’s church tomorrow and then afterwards we’ll have lunch together and just hang out. I love hanging out with my mom!!!!!! :)

    Oh, that chicken looks amazing. I found Pom Wonderful here (?!) and was toying with the idea of buying it after seeing Mari’s tofu recipe…I think you just sealed the deal.

    I had my tonsils out when I was about 4- they made me eat dry cornflakes and toast to smooth my throat down! OMG, worst pain ever. I had been promised ice cream and jello, but the nurse quite literally force fed me cornflakes while I screamed and screamed. Not fun. I had 4 wisdom teeth taken out a few years ago and lived off soup and yogurt while they healed- I haven’t eaten soup since! Hehe :)

    The pomegranate chicken is freaking genius Janetha! I want some. Now! I like to present my meals nicely too, but since I live in a crappy, poorly-lit dorm, I have to improvise. For example, I use a decorative pillow slip as a place mat, lol! That surgery sounds terrible, but not being sick all winter is totally worth it. Yay! I have only ever had one surgery, which was getting my wisdom teeth out. Normally this is not that much of a problem for most people, but there was one minor problem for me: apparently, I am allergic to vicodin (and ALL narcotics), but since I had never had any before the surgery, we didn’t know. It was the most miserable week of my life.

    1. That surgery sounds miserable! The one and only surgery I’ve had is getting my wisdom teeth out and it SUCKED. I was in somewhat of the same boat as you: it was horrendously painful and I couldn’t eat proper food for ages! I lived off of yoghurt and lost 15 pounds in a WEEK. Ugh. It sucked a lot. I hated it and cried a lot and was generally miserable so I feel ya pain!

    2. I believe we’re hanging out with Dan’s mom tonight but mother’s day in the UK was in March so I’ve already celebrated with my mum!

    Fun weekend you had planned there lady, hope it was stellar!

    Oooh, is the photoshoot for what I think it’s for? I’m having issues finding a photographer for that. I may have to self-timer. Classss-y.

    1. Never had surgery! Just stitches in the back of my head and a broken elbow three times.

    YUM!!! Your POM Chicken creation looks delicious – I NEED to try it for sure. Jay won’t eat it because he’s weird & doesn’t like sweet meat…but, I am so down for trying it.

    Ok – freaky deaky….I was actually around for your Flash Back Friday…I was so like I remember that and that and that LOL! I also do remember being so jealous of your chance to eat mass amounts of ice cream :D

    Hey Janetha, I just found your blog and I love it!! I too am from SLC . I just read your post about getting your tonsils out and I must say Neilsens Frozen Custard is my absolute favorite dessert of all time. Your house pics look amazing and congrats on the upcoming wedding! -Hailey- :)
