an early thanksgiving feast.

November 23, 2009

it is 5:43 PM monday night.  guess what? i am still full. i don’t know how that is humanly possible, but i am.  the only things that have entered my mouth today (TWSS) are a few bites of an egg scramble, 1 slice of whole wheat toast and an apple. oh, and some wasabi peas.  i am still so, so full from yesterday’s feast!!

how about i take it from the top?  the top of sunday, that is. sure, ok.

sunday morning i woke up bright and early at 8 AM and then went back to bed until 11.  after some house cleaning and coffee drinking, marshall and i decided to go to einsteins.. after all, it was my free day (which, on body for life, is a day off from exercise & by-the-book clean eating).

i got an asiago bagel, toasted, with sun dried tomato cream cheese..

is it just me or do you guys always find that eintsteins puts WAY too much cream cheese on their bagels? i usually ask for just a skiff but i forgot this time. i ended up scraping it all off into a pile on the side…

anyway, snowboarding did not happen yesterday because, well, the lack of snow is making me think the gasolina it takes to drive to the resort is just not worth it. side note: it finally DID snow so i will be going up thursday, friday, saturday, sunday.. :D

so i think i mentioned it, yesterday my family celebrated thanksgiving because it was the only time we could ALL be together (minus my sister & her fam in cali).. so we celebrated the holiday early and my mom, dad, grandma, marshall & i will be celebrating it AGAIN on thursday.. just not quite as extravagant as yesterday was.

i got to mi madre’s around 2:30 and started cooking up a storm!!

the next 3 hours were basically non stop cooking. i, of course, was in heaven.  my mom and sister and sister in law all helped and it was so much fun!!

these were good, but not as great as i had hoped they would be. i even quadrupled (yes, you read that right) the amount of balsamic.. still, not the greatest. BUT, yummy still.

for my deviled eggs i simply mix the yolks with a little bit of each: mayo, mustard, salt & pepper. sprinkle with paprika. my mom got me that cute orange deviled egg pan when she was on a trip somewhere! i think new mexico?

this salad was SUCH a winner! one that i will make again and again.  my sister in law lindsay did a fantastic job at whipping up the vinaigrette.  the only thing i left out of the salad was the hazelnuts, i didn’t have any on hand.

i loved this recipe and i found it by googling “green salad with pear”~turns out the website the recipe is on has a ton of delicious looking recipes. can’t wait to try some out!

ever since seeing angharad make this on her blog i have been wanting to whip it up!  umm. yum. it was a hit! the only problem was it made quite a bit, and since we had SO many dishes.. i wish i had halved the recipe.  also, it was baking at my sister’s house and so i wasn’t there to keep an eye on it. the top got a tad toasty but it was still fantastic once i dug below the charred layer ;)

i can’t decide if my favorite dish was this one or the salad.  it was incredible! everyone else loved it too.  it was very simple to make, it was just thiin layers of sweet potatoes layered with parmesan and goat cheese.  the flavors all combined fabulously.  definitely one for the books.

this was simple yet sophisticated.  originally, i was going to make a broccoli & gruyere gratin that i saw in real simple magazine, but we were short on time and oven space so we ended up just steaming the veggies and melting the cheeses over top.  easy and elegant!

i pulled this recipe from real simple magazine.  in addition to the onions & thyme, the recipe called for white wine, white wine vinegar and salt & pepper.  it was really good on top of the turkey!

look at that color!  this was another recipe from real simple magazine.  and it was just that: real simple.  my mom was in charge of this one and she did a great job.  it was 1 lb cranberries, 1 cup apple cider, 1/3 cup granulated sugar and 1/4 cup brown sugar.  sooo much better than the canned stuff!

well there you have it, the eight dishes i planned.  in addition to these, my mom made regular mashed potatoes & gravy, the absolute BEST stuffing in the world (my favorite part of thanksgiving, hands down), fruit salad (as per marshall’s request) and a glorious 22 lb turkey!!

once we sat down to eat, i was exhausted.. and actually not as hungry as i wanted to be.  with all the running around, tasting, bites here and there.. i just lost my appetite! but, of course, that did not stop me from eating!! my plate~

i am not quite sure how i managed to eat pumpkin pie only a short time after dinner.. but i did.. and it was fabulous.  thanksgiving is not thanksgiving without pumpkin pie with fresh whipped cream (with lots of vanilla extract)!!  can you believe one of my best friends hates both pumpkin pie AND whipped cream? i know, she’s clinically insane.

the evening was spent hanging out together and just enjoying the company of our fam all together.  PLUS it was snowing! glorious, glorious snowwwww :)

we had a few rousing rounds of boggle and i won.. again.. haha. maybe one day someone will dominate me at the word game.  but the two things i know best are cooking and word games!  well, and workouts.. but that was not on yesterday’s agenda.

i am happy to report that my full body workout i did saturday left me with some killer DOMS yesterday. 

well i am not even going to recap today~i already told you i have not eaten much as i had no appetite!  i just got home from the gym where i busted out 20 minutes of HIIT on the treadmill, 5 minutes of high resistance on the crosstrainer elliptical & 10 minutes of ab work… gotta whittle my middle!!

i am going to spend the rest of the night unpacking (yes, MORE unpacking!) and catching up on my reader and hopefully hanging some artwork/photos on my bare walls. once i am all done with my room i will show it to you guys! maybe i could do a video tour of my house?

anyway, hope you all had a great monday. mine was not that great, in case you are wondering..  i am a tad irritated.  there was a snow storm and i slid/crashed into a retaining wall and my car’s front bumper is all sorts of scratched up. i am ok though!  i just don’t want to dwell on it so i didn’t write about it but i did want to mention it!

hope everyone has a short work and school week this week! i know i am excited about tomorrow being the second to last day of my work week!

1. hands down, what is your favorite dish (not dessert) to eat on thanksgiving? like i said up there, my favorite is my mom’s stuffing. it is out of this world delicious! but i think the sweet potato galette was second place this year…

2. favorite kind of pie? i may have asked this one before, but oh well. fresh peach pie with homemade whipped cream is mine. but daaang.. pumpkin pie is so good!

    the feast looks amazing! you guys are talented chefs, and you look so cute in those aprons. haha! your mom is so fab! and how can anyone hate pumpkin pie OR whipper cream? hating BOTH is definitely insane.

    the car sounds scary! I’m glad you’re okay. I love mashed potatoes or roasted veggies on thanksgiving. and pumpkin pie for me! or cheesecake pie ;)

    You guys are so fancy! I wish I could do fun recipes like that but we are traditional all the way…turkey, stuffing, Campbells green bean casserole, etc. I actually really like the casserole, as nasty as I thought it would be (never had it until I started doing Turkey day with Mitch, three years ago)

    I love the shredded brussel sprout photo b/c it looks like it’s on the move :-)

    I always ask for my cream cheese on the side so I can put on as much as I want (plus I’m insane as I ask them to scoop out the innerds before toasting= I know nutty… a carb saved is a carb earned!)

    Your mom drinking grape juice is so funny.

    Your whole menu looks amazing: sweet potato, bread pudding, cauli- wow.

    And Penny is all over the kisses tonight- yeah baby!

    Stay safe on those roads. I have a horrific fear of driving on snow as I skidded on black ice and crashed when I was a teenager. Just soooo lucky there happened to be no oncoming traffic or I might not be typing this right now.

    Your Thanksgiving feast looks like it was a big hit! Everything looks delicious. The apron photo of you and your mom is so cute. You are both absolutely gorgeous! I am jealous that you have snow this weekend!! Sadly, in the south that is just not possible.. good thing I will be in Sweden for Christmas with LOTS OF SNOW! yay :)

    My favorite thanksgiving dish is my mom’s broccoli rice casserole. I am not a big fan of pie. Gasp! I know. I am crazy.. but if I had to choose.. it would be pecan pie.

    Hey chickadee! Glad the bread pud turned out well but yes, it’s ma-hoosive! I kind of love how crispy on top yours looks though. Mmm crunchy cheeeeese.

    Oh so I do the EXACT same thing with bagels bought at places like Einsteins – I feel like they put half a tub on! I always scrape :)

    1) Ohhh easily stuffing! It’s my favourite thing ever. Although if ham is on hand with some sort of delicious creamy, cheesy sauce, I will attack it!

    janetha bean…i want to be a part of your family. this looks like a fabulous, delicious thanksgiving. my sisters are all about the tradish, so i don’t think i could get away with any of these dishes but they all look FABULOUS!

    ummm the second thing we will do when we meet is play boggle. the first is eat indian food, kapeesh?

    i am all about the stuffing and i don’t like pie – i know, clinically insane. i don’t like whipped cream either. please be my friend still :)

    1. I actually hate pretty much everything Thanksgiving-y. I eat less on Turkey Day then pretty much any other time! I do like most things with sweet potatos though.

    I cannot eat them b/c of allergies but i used to love deviled eggs. I break out in hives so that’s clearly a no go for me these days.

    Fave dish…god. I cant pick. I know this sounds lame, but the fare on T-Day is not my kinda food. Its too cooked/heavy for me to “love”. Talk to me on 4th of July where it’s light salads and fruits and summer foods. I can eat a half a watermelon myself :)
    2.Fave pie…thick choc pies of any sort. Deviled this or that, you name it, choc is my bff.

    I want the sweet potato galette recipe! Sweet potatoes and goat cheese are basically my favorite foods. That galette is perfect.

    Thanksgiving is my favorite holiday! My favorite foods are definitely sweet potato casserole and the chestnut stuffing my mom makes every year.

    I’ve never had a white Thanksgiving, Maryland gets a bit of snow but usually not that early on. I’d love to learn to snowboard! I only skiied a bit in middle school. I only went in Maryland, where it’s mainly fake snow. I’d love to try it out on the real stuff!

    WOW! What a spread. Love that ya’ll celebrated t giving when you could. Best looking dishes (to me): caramelized onions and cranberry- YUM! I made those brussels and LURVED them. Sorry you felt they were only so so! Maybe a litttle more shredding of the brussels next time?? You and your mama are superc ute.

    you just got me so very excited for thanksgiving! I mean i have always been excited, but now i am OVER THE TOP excited for the feast!

    I LOVE cranberry sauce, on my post frmo last night I made my own because we are going to family friends house and I am scared there will only be the jelly kind there (that in itself scares me!) it is AMAZING! I also love mashed sweet potatoes with marshmellows of course! so classic and deliciious and comforting….hey its one day a year I can eat marshmellows atop my starch :)

    favorite pie would have to be key lime pie! ( i know not thanksgiving inspired, but it is my fav!)

    Holymoly that is a feast to end all feasts! That sweet potato galette does sound really good. I’ll have to mention it to my mom for Christmas this year. She did candied sweet potatoes for the first time last year and we all agreed they were a no-go for this year.

    That sucks about your car! Just think, it’s “broken in” now. What’s a Subaru without a few badass scratches?

    1. Stuffing! Lovelovelove it. I always go back for seconds on the stuffing too, and turkey dinners are the only time all year that I have it.

    2. Apple pie. But I like it best for breakfast the next day ;) Oh! PB or chocolate pie are close after though.

    This post has me seriously considering putting myself up for adoption and leasing out my neurotic services to your family as that “weird cousin” who shows up on the holidays. Everything looks So. Freaking. Good. Especially anything with mushrooms and the broc/cauliflower number. Wow.

    I’m not really a pie person, but when I was younger I was addicted to cherry pie and would actually just eat the filling out of a jar. Gross? Yes, but I also thought I was She-ra and wore a tiara, so it made sense at the time.

    Looks like you had a fabulous Sunday. We had a mini spur of the moment Thanksgiving at moms on Sunday as well. I was pretty darn full also!!!

    My fav. dish would have to be my moms squash casserole and my fav pie would have to be my moms chocolate pudding pie with a big dollop of cool whip on top!! :)

    seriously your fam should have had a turkay day tv show. this feast puts ours to SHAME. no doubt. that sweet potato concoction should definitely be making an appear at our house for xmas :)

    for sure my fav dish is my grammy’s secret special “spanish vegatable” its just lots of veggies in tomato sauce kind of thing..sounds weird but shes been making it for like the amount of time shes been alive and it’s aweeeeeesome.

    1. I actually am not a huge fan of Thanksgiving food items (gasp, I know!). But, my mom makes an amazing Sweet Potato Casserole. Unfortunately I won’t be enjoying it this year though :(

    I used to work at a local bagel shop and we were instructed to pile on the cream cheese, it’s kinda fun to do…just not to eat. :)

    1) Rolls. I know, boring right? But I don’t normally allow myself to gorge on bread too often so I get super excited for good, doughy wheat rolls!

    Holy moly that is the most side dishes I have ever seen at a Thanksgiving meal! So much glorious looking cheese lol.

    1) My dad makes this amazing sweet potato caserole that involves pinapple, brown sugar, and marshmellos. Oh em gee.

    2) Pecan! It’s probably the highest in sugar and calories but soooo delish. My dad also makes homemade pumpkin pie that is amazing (can you tell who the cook is out of my parents?)

    This is such an incredible post! Oh ma gah I’m dying over everything. All the cheese sounds amazing, too. Espesh in that sweet tater dish! And I need the real simple recipe for the apple+cran sauce. mmmm.

    I am so sorry your Monday was bleh. And I’m also happy to hear you’re OK after your little fender bender. Nothing a dent wizard and some paint (or Sharpies) can’t fix. With a pop in the car biz, I can assure you it will be easily fixed ;)

    My fave thanksgiving dish(es): hot, fresh white rolls, MASHED POTATOES and candied yams. That’s basically all I’ve eaten at Thanksgiving my whole life. I don’t need anything but the carbs. And pie.

    Speaking of, I’d say pumpkin is definitely my favorite. Actually, pumpkin cheesecake with gingersnap crust is better. A Tollhouse pie is also TDF!!! OK, stomach is officially growling.

    Oh my word, Janetha…looks incredible! I want that sweet potato dish. Bookmarking the recipe for sure! Ah, so much goodness! Drooling over the turkey pic. And yes, get your friend some help- how can anyone not like pumpkin pie and fresh whipped cream?!

    Bagel places always put a ton of cream cheese on. I like when they put it seperate- I am a cream cheese FIEND (for real) but too much kills the bagel-doughy-goodness.

    1. hands down, what is your favorite dish (not dessert) to eat on thanksgiving? Okay, we don’t do Thanksgiving but for Christmas every year my mom used to make “corn pudding”. Basically Jiffy corn muffin mix, sour cream, butter, egg, corn + creamed corn. SO damn good with the juices from the meat. We can’t make it anymore because she keeps Kosher now and n mixing meat/dairy and the Jiffy mix has lard in it (what?!). We also had a plum and ginger stuffing one year that was incredibly beyond words…but turkey + cranberry sauce = heaven.

    Good lord, that feast looks INCREDIBLE! I am so impressed. I think Thanksgiving should happen several times a year so that people can experiment with different fun dishes.

    Love your Thanksgiving – SUPER love that so many veggies are making an appearance. I’m gonna copycat a few recipes (especially the sweet potato one!).

    I thought the brussells sprouts were flying across the table, thus the blur.

    Stuffing is definitely my fave part of Thanksgiving. I make the Herb StoveTop (or whichever flavor doesn’t have MSG b/c most of them do) and add plumped raisins and water chestnuts because that’s how my mom always made it.

    Fave pie is cherry but I’m all about the vegan crisps these days because I love pie crust tooooo much.

    OMG that sweet potatoe galette looks beyond amazing. I may just have to steal that recipe!!! You and your apron are so cute! Where did you get it?
    1.My fav thanksgiving dish is stuffing, like you said. It’s just the most absolute, perfect creation known to man. And since I only eat it on Thanksgiving and Christmas..I must indulge.

    NOOO. Not the new Subaru! That blows. I actually plan on getting one when my old girl (pale rider) calls it quits. Subarus are safe in snow, which I FEAR driving in. So it just makes sense. Glad you’re okay though!

    My fave dish is my sweet potato and winter squash casserole. You’ll see the recipes and pictures of it soon enough.

    Fave pie is without a doubt, homemade coconut cream. SO GOOD! Pumpkin is a close second though!

    What amazing food!!!! Everything looks soooo amazing! And it sounds like your whole family had a wonderful time, and that’s what really counts…

    1. I love stuffing with mashed potatoes and gravy all mixed together; in fact, I don’t care for them much when they aren’t all mixed together. (When I was little, I used to mash up everything on my plate into one giant mess; it’s so funny to me that the toddler likes to eat things separately…)
    3. My favorite pie is fresh peach pie.

    for some reason I find whenever I don’t eat as much I always end up with no appetite, versus when I eat like a horse I can’t ever seem to get full. One of the mystery’s of the world, I suppose.
