it’s been a long weekend.
and not just because i had friday off. this weekend has been one of the most emotional weekends ever, i want to thank all of you for your comforting words, thoughts and prayers regarding my last post. it is still very hard to comprehend right now and we are dealing with it as best as we can, trying to go about everyday life. it is hard to see everything around me going on as per usual when something so huge and tragic has just occurred. tough situation, for sure.
i have a lot to catch up on! for the sake of trying not to bore you all, i will just touch on the highlights.. a lot has gone on this weekend though:
- dinner out with family friday night
- 10k race saturday
- cooking/baking/bbq saturday
- demolition derby saturday
- mine & marshall’s 2 year anniversary saturday/sunday
- vegan brunch sunday
- randy’s birthday sunday
whew! so without further ado…
FRIDAY!
i got up friday morning and the first thing i did was run because i was so butt hurt about waiting around for the gym and never going on thursday. it was a good run:
distance: 3 miles
time: 28 minutes
calories burned: 252
ave HR: 156
max HR: 187
and then i made breakfast for marshall & i..
feta, spinach, shallot, red pepper, morningstar sausage & tomato scramble w/ avocado
marshall had bacon and cottage cheese with his too. he is trying to gain weight.. jerk.
i’m gonna do a little horn tooting and say this was divine.
i also found some new hummus at the store.. er i guess they call it hommus.. whatevs
it is real good! and it better be, for $6 a container!
the brand sounds like it knows what’s up: “oasis is the only mediterranean food manufacturer in the USA that produces the main ingredient of our hummus, which is tahini. Also, we use only naturally frown dry chickpeas which are soaked and boiled unlike other manufacturers who use canned chickpeas. studies suggest that our wholesome natural foods improve the quality of life”

i had some ice coffee too. it was a scorcher outside.
on my way out the door i had a pumpkin chocolate chip cookie with a side of penelope jane. i couldn’t resist.
didn’t eat for quite awhile.. this was the period where i heard the tragic news. around 7:30 PM my fam and i went to a spot called guru’s which i have not been to in years and years.
started with the hummus & chips which was a little whack.. hummus should not be served with tortilla chips, don’t you all agree?
i had some chipotle chicken wrap sans the mayo sauce and with a side salad..it was delish
i ate half.
my mom had the fish tacos, waaaay bomb dot com!
my dad had the thai peanut pasta which was super good too
my dad also had bread pudding for dessert, i didn’t try it, but it was photo worthy.
SATURDAY!
woke up at 5:30 AM.. yawn. this is what i had before my 10k:
1/3 an apple + PB
800 mg of this stuff

i finished the race in 1 hour 4 minutes.. not bad for my first 10k ever. i had never run more than 3.2 consecutive miles in my life and i just went and ran 6.2.. sweet!
after the race i had some water & fruit

after the race i went home and had some breakfast/lunch whatever..

and i made some stuff for the bbq i was going to with marshall:
- veggies & hummus
people always get a kick out of purple cauliflower when i take it places. do you guys get the same silly comments?
- vegan peanut butter bars

- vegan pasta salad (farfale, rotini, poppyseed dressing, grapes, celery, apples) and i forgot to take a photo. woops. it was pretty!
and the star of the bbq..
- patriotic mini cheesecakes (with blueberries & raspberries)
after the bbq it was time for the demolition derby..
first time for me on this one. yep, i was a demo derby virgin up until last night. the first heat we placed bets and i won!
haha.. wow.. demolition derbies are hilarious and the people watching is pretty fun too. here are a few more photos.

and afterward there was a fireworks show
went home and marshall and i exchanged gifts. two years ago at 2 AM on the 5th of july (so.. night of the 4th) we became boyfriend/girlfriend. awwweeee. haha.
HE GOT ME A FOOD PROCESSOR!
yaaaaaaaaaaaaaaaaaaaaaaaaaay! and i got him an new ipod classic.
SUNDAY!
i slept like a log last night. i think all the crying/stress has gotten to me, because i slept for a solid 11 hours straight without waking up once. wow. once we got up and whatnot, we went to a vegan spot with marshall’s buddies, it is called vertical diner.. i like going there because my long time friend works there and i got to see her!
i got a breakfast burrito: tofu scramble, vegan sausage, beans, rice, and a whole bunch of sauces i put on the side because i didn’t want them. also it came with potatoes and i got a side of avocado. i used the pico but not the cheese sauce, tomato sauce or sour cream.

i ate half. i have been doing that a lot lately. just eating half when i eat out. i find that i like this better, that way i don’t conceive a food baby!

we did some shopping and hanging at the bookstore after brunch. i checked out anthropologie and looked at all the overpriced clothes and dishes that i wished for, went into sur la table and marshall bought me a serrated knife to go with the knife set he bought me for my birthday awhile back. thanks babe!

came home and made randy dog a birthday cake! we aren’t sure of his exact birthday, but it is around this time, so we designated july 5th to be his birthday. he is FOUR!
i baked this dog cake for him. it had flour, baking soda, egg, peanut butter, carrots, agave and vegetable oil.

they loved it! but then again you don’t have to do much to please a dog when it comes to food, right?
whew. that is about all i have been up to. sorry this is so long! i hope you made it all the way through without falling asleep :)
i have not had a chance to read all of your blogs yet since it has been a rough and busy weekend.. but i am about to do that next. a few items i want to mention:
- happy happy birthday to K yesterday! sorry i didn’t post yesterday girl, but i love your face!
- congrats to susan on her tri! i know she finished because she is amazing but i haven’t checked her blog to see yet.. i am going there in a second!
- congrats to leah on her half marathon! i know she was running it yesterday and i am hoping there is a post up about it for me to go read!
- a super amazing company is going to have me host my first giveaway ever! but it won’t be for a bit.. i am going to be doing it as my 100th post.. so hang in there a bit longer folks :)
