banana muffins.
these are vegan. the dudes love them!
the original title for these muffins is “chocolate chip banana muffins” but i have since decided to just call them banana muffins because you can really add anything (or nothing!) to them and make them any flavor you decide! but the bananas need to be in there because they tie the muffin together and keep it ultra moist and whatnot.
i got this recipe from nicole’s blog, thanks girl!
ingredients:
- 1 cup all purpose flour
- 1 cup whole wheat pastry flour
- 1 Tb baking powder
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/2 cup granular sugar
- 1/2 cup brown sugar
- 1/3 cup canola oil
- 4 mashed bananas
- 1 Tb vanilla
- 1/4 cup water
- filling of choice. examples: chocolate chips, blueberries, cranberries, peanut butter chips, etc.
- optional: nuts
directions:
- mix flours, baking powder, salt and cinnamon in a bowl, set aside
- mix sugars, banana, oil, water and vanilla in a bowl until smooth
3. add flours mixture to the wet ingredients, mix well
4. stir in filling and/or nuts
5. fill lined muffin tins until they are almost full to the top
6. bake at 350 degrees for 25 minutes, edges will be golden brown

It’s been a while hu!? This is Lindsay Lloyd, Tommy’s sister from the Boarding house. How the hell are things? I hope and it looks like things are going well for you… Sorry to hear about your mom, I was sending good vibes :) but it looks like she is doing well now. That is awesome!
I have been following your blog for a bit now, I love it! Such good stuff, but I have a question. I am by no means a chef or a baker but I am trying :-/ I would like to add more protein to things like your banana muffins. If I use protein powder how much should I use and is it in replace of something else? I really am not that good at the cooking thing but like I said, I am giving it a go…
