pancake purist.

breakfast food is my favorite genre of food.  is that the right term? genre? sure.. i am going with it.

i could eat breakfast for, well, breakfast. and lunch. and dinner. and a midnight snack. it’s just the best.

one of my favorite breakfasty things to eat is pancakes.  thin ones, fluffy ones, plain ones, topped ones.. i love pancakes.

guess who doesn’t love them?

my husband.

guess who had to work yesterday?

my husband.

guess who made pancakes for breakfast because she had the day off and the house to herself?

this girl.

saturday morning, i whipped up a personal sized batch of my favorite protein pancakes.

i have tried lots of protein pancake recipes, but this is my favorite:

  • 1/2 cup oats
  • 1/2 cup cottage cheese
  • 1/2 cup eggbeaters (or egg whites)
  • 1/2 tsp vanilla bean paste
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder

simply blend all ingredients and cook on a 350° griddle. simple!

whenever i am cooking pancakes, i spend the whole time thinking about what toppings to put on them.

some of my favorite topping combos are:

  • peanut butter & raspberry jam
  • maple almond butter & bananas
  • strawberries & powdered sugar

…to name a few.

but sometimes.. just sometimes.. i have to be a pancake purist.

what’s a pancake purist, you ask?

plain pancakes topped with two things: butter & syrup.

oh man. what is it about the combination of butter and syrup?! match made in breakfast heaven.

    I’m a big fan of mixing bananas and cacao nibs in the batter, then topping with coconut and any kind of nut butter. That’s my current favorite way to eat pancakes. :)

    My favorite pancake topper is I Can’t Believe It’s Not Butter Spray. Seriously. Growing up, my grandparents would make us pancakes for breakfast every time we were at their house, and they ALWAYS gave us spray butter to top them with. I love the stuff now because it’s got so many memories attached to it…even if I did spray until the top of my pancake was covered in bright yellow chemical liquid :)

    i like them naked. hehe! that way you can dip them into anything. Melted almond butter, yogurt, jam, etc.
    Pancake purist at heart here!

    I honestly like sugar free syrup on them. It’s one of the few splenda filled things that I still eat but I like the way it tastes. Regular syrup is too thick for me.

      yep, this was sugar free. that is like the ONLY sugar free thing i like. syrup and ketchup.

    1) I use the exact same recipe. Love.
    2) I’m sure we’ve discussed this before, but butter + syrup (table, not maple) are my favourite pancake/waffle toppings too. Boring, maybe. But it’s a classic combo for a reason!
    3) Growing up, I also loved molasses on my pancakes.
    4) HOW DOES MARSHALL NOT LIKE PANCAKES???
    5) I had a dream last night that we were on a road trip together.

      1. it is the simplest one. and the best! 2. agree. this was table syrup. sugar free, in fact. 3. i need to try that! i haven’t used molasses as a topper, only a cookie ingredient. 4. i am still waiting to hear the results from the insane asylum. 5. can we make that dream a reality? please? 6. likewise! love you!

    Breakfast for every meal…..love it. Especially cereal combos.

    My mom always made crepes from scratch, rolled one up and poured Karo light syrup on it or sometimes jam in the middle. I didn’t even know there was another “pancake” type until my friend’s mom pulled out Bisquick at a sleepover and made a stack of small pancakes. Just not the same…

    Ever since I was a little girl, pancakes have been one of my favourite things in the world. (Although here we make crêpes instead of American thick pancakes.) I always had them with hazelnut chocolate spread. Chocolate+fruit is obviously another super yummy combination, but I only had those a few times when I ate crepes in a restaurant. Now I make thick pancakes (similar recipe to yours) and I usually top them with blueberries and quark; well, I actually put layers of quark+blueberries between pancakes, so it’s more like a cake. :D I’d really like to try them with syrup once, though! I assume that’s maple syrup?

    How can you NOT love pancakes?! He’s crazy, clearly…haha! I agree, nothing’s better (and easier!) than maple and butter…yes ma’am!

    I’m really intrigued by your recipe since it has cottage cheese – I’ve never seen that. I’d buy cottage cheese and then have to eat pancakes everyday until it was gone because heaven knows I won’t eat it plain! :)

    Your little syrup thingy is so cute!

    I like butter on my pancakes with just a teeensy amount of pure maple syrup. I never liked syrup on my pancakes or waffles growing up – just butter.

    I love the mini boat too! I also really like powdered sugar on pancakes, plus agave or a little bit of maple syrup, and some fruit. I’ve never been a big syrup lover, but I like agave because it’s a lot lighter. Your pancakes look amazing though — beautiful pictures!! How can Marshall not like them?! :)

    i’m a purist too…the only thing that changes that is my mom’s homemade applesauce with butter on top!

    i often use greek yogurt instead of cottage cheese depending whats on sale that week! (frugal, I know).
    Lately I’ve been loving pancakes with mandarin oranges and strawberries.I had it at some joint in LA and now I’m addicted.

    I dig peanut butter and fruit, with a dollop of yogurt and drizzle of syrup! But I always like them better when they’re made for me ;)

    i absolutely LOVE pancakes, i haven’t had any since in Mexico, and there i topped mine with just cinnamon and sugar, it was freakin good, never thought of that combo before. I normally just added maple syrup

    I’ll put almost anything on my pancakes lol, eggies, sausage, syprup, a little butter…but mostly I’ll do some form of nut butter coconut and honey :-) mmmmm

    I like my pancakes plain or just with fruit and a little SF syrup.

    I’m weird, I cannot stand the smell of syrup, especially the real deal!

      i use slow cooking (old fashioned) oats, but i am sure any would do!

    I only like butter on my pancakes. No syrup, no fruit, no nut butter…I am a plain jane pancake kinda girl!

    Beautiful Pictures! I tend to do cinnamon greek yogurt, strawberries, and peanut flour sauce. But sometimes simple is better! those look incredible!

    Love your little syrup boat!!

    Also, my scuzzband doesn’t like pancakes either – AND he works on Saturday mornings, so it’s the perfect time for me to whip up a batch of the fluffy goodness. I like to top mine with PB and agave.

    I like to put syrup and nuts on my pancakes, and I usually mix the fruit into the batter itself:)

    ahh you may hate me but I am not a HUGE fan of pancakes. I think its because I have this OCD thing about having hot foods like really really hot. and pancakes get cold pretty fast…any tips??! those look SO SO SO good!!! i definately want to try that recipe, its delicious, healthy and right up my alley!

    last time I made pancakes I heated up some frozen fruit, so it got all hot and syrupy and poured that on top…oh it was good!

      i got nothin’. my pancakes were luke warm after the photo shoot.. that hot fruit idea is a good one, though! they do stay a lot warmer now that i use a griddle instead of a frying pan, because i can cook them all at ONCE.. but still, photo sesh? yeah.. they cool off.

    Love those pancakes!! I like fresh fruit on my pancakes – usually strawberries, blueberries or bananas. Sometimes I have butter and syrup but not often.

    I love pancakes! Luckily, Ben made me a batch yesterday post-run.
    Not-so-luckily, I’m sure they were cooked in extra butter and had 6 extra eggs inside.
    Oh well, they were dee-lish!

    Pancake stack perfection. Mmm. I think I’m overdue for a pancake breakfast!
    I usually eat my pancakes with banana slices, plain yogurt, and syrup. Sometimes I get really crazy and eat them with jam.

    Love love LOVE pancakes…well, any breakfast food actually, but pancakes are at the top, followed closely by oats! I have topped my cakes with just about everything under the sun: nut butters, coconut cream, cream cheese, syrup, greek yogurt…the list goes on and on! I guess it just depends on the mood I’m in. I’m not much for butter on pancakes, but sometimes it is nice to just go plain Jane with some pure maple syrup!! Mmm!

    Made these today after my hike. They are delicious :) Thanks for sharing the recipe. I like to eat my pancake roll-up style so that’s how I ate these babies. With flaked coconuts, peanut butter and chocolate. It.Hit.The.Spot.

    I think I’m going to make the chicken casserole next this week.
